Entertaining is huge during the spring and summer months, and nobody wants to spend hours in a hot kitchen preparing food.  We found some wonderful, quick, simple recipes sure to please for your parties this season.

Salsa is always good to have out while entertaining.  Most everyone likes salsa, and it’s fun to dip!  Here’s a great filling salsa recipe for your guests…

                   Cilantro, Black Bean, and Corn Salsa




1 (15 ounce) can yellow corn, drained

1 (15 ounce) can white corn, drained

2 (15 ounce) cans black beans, drained

and rinsed

1 (14.5 ounce) can Italian-style diced

tomatoes, drained

1 bunch finely chopped cilantro

5 green onions, finely sliced

1 small red onion, finely chopped

1 red bell pepper, seeded and chopped

1 tablespoon minced garlic

1/4 cup lime juice

1 avocado - peeled, pitted, and diced

2 tablespoons olive oil, or to taste



Stir the yellow and white corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in a large bowl. Gently mix in the lime juice and avocado. Drizzle with olive oil to serve.

Throw some meat in that dip mix!  Here’s a great cheeseball recipe that would be easily served with some crackers…

                  Dried Beef Cheese Ball




1 (8 ounce) package cream cheese,


3 ounces dried beef

2 green onions, chopped

1/4 teaspoon onion salt

1 1/4 teaspoons monosodium glutamate

1 tablespoon Worcestershire sauce



In a medium-size mixing bowl, combine cream cheese, dried beef, green onions, onion salt, monosodium glutamate, and Worcestershire sauce. Form the mixture into a ball and refrigerate before serving.


Sandwiches are good to have on hand, but wraps are a lot more fun!!

                  Grilled Bacon Jalapeno Wraps




6 fresh jalapeno peppers, halved

lengthwise and seeded

1 (8 ounce) package cream cheese

12 slices bacon



Preheat an outdoor grill for high heat.


Spread cream cheese to fill jalapeno halves. Wrap with bacon. Secure with a toothpick.


Place on the grill, and cook until bacon is crispy.
