Spring is just around the corner, and most of us are
more than ready for it! We wanted to
offer you some fabulous Spring recipes to get you – and your taste buds – ready
for Spring.
This recipe made our mouths water!! Lettuce wraps are wonderful, fresh, and sure
to be a crowd pleaser.
Cherry
Chicken Lettuce Wraps
INGREDIENTS:

2 tablespoons canola oil 1 tablespoon minced fresh ginger root 1 1/4 pounds
skinless, boneless chicken breast halves, cut into bite size pieces 2 tablespoons rice vinegar 2 tablespoons teriyaki sauce 1 tablespoon honey |
1 pound dark sweet
cherries, pitted and halved 1 1/2 cups shredded carrots 1/2 cup chopped green onion 1/3 cup toasted and sliced almonds 12 leaves of lettuce |
DIRECTIONS:

1. |
Heat 1 tablespoon
oil in a large skillet over medium high heat. Add ginger and chicken and
saute until cooked through, about 7 to 10 minutes. Set aside. |

In a large bowl,
whisk together remaining 1 tablespoon oil, vinegar, teriyaki sauce and honey
until mixed together. Add chicken mixture, cherries, carrot, green onion and
almonds; toss together. |
|
3. |
To Serve: Spoon 1/12
of the chicken/cherry mixture onto the center of each lettuce leaf; roll up
leaf around filling and serve. |

perfect for Spring eats. You can try
this wonderful recipe, or toss your own combination of ingredients in the mix
to create your very own signature Spring pasta recipe!
Penne with Chicken and Asparagus
INGREDIENTS:

1 (16 ounce) package dried penne pasta 5 tablespoons olive oil, divided 2 skinless, boneless
chicken breast halves - cut into cubes salt and pepper to taste garlic powder to taste |
1/2 cup low-sodium chicken broth 1 bunch slender
asparagus spears, trimmed, cut on
diagonal into 1-inch pieces 1 clove garlic, thinly sliced 1/4 cup Parmesan cheese |
DIRECTIONS:

1. |
Bring a large pot of
lightly salted water to boil. Add pasta, and cook until al dente, about 8 to
10 minutes. Drain, and set aside. |

2. |
Warm 3 tablespoons
olive oil in a large skillet over medium-high heat. Stir in chicken, and
season with salt, pepper, and garlic powder. Cook until chicken is cooked
through and browned, about 5 minutes. Remove chicken to paper towels. |
|
3. |
Pour chicken broth
into the skillet. Then stir in asparagus, garlic, and a pinch more garlic
powder, salt, and pepper. Cover, and steam until the asparagus is just
tender, about 5 to 10 minutes. Return chicken to the skillet, and warm
through. |

4. |
Stir chicken mixture
into pasta, and mix well. Let sit about 5 minutes. Drizzle with 2 tablespoons
olive oil, stir again, then sprinkle with Parmesan cheese. |
Of course we
had to include a grilling recipe!! It is
Spring, after all. Fire up that grill
and let this pizza recipe light up your dinner tonight!!
Crispy
Grilled Pizza Margherita
INGREDIENTS:

1 (16 ounce) package
pizza dough, at room temperature 1/4 cup olive oil 4 ounces shredded Asiago cheese 3 large tomatoes, thinly sliced |
1 cup packed whole basil leaves 1 (8 ounce) package
fresh mozzarella cheese, shredded salt and ground black pepper to taste |
DIRECTIONS:

1. |
Preheat an outdoor
grill for high heat, and lightly oil the grate. |

2. |
Place pizza dough in
a bowl to rise 2 to 3 times the original size, about 1 hour. Flour a work
surface and a rolling pin. Divide dough in half; roll each half to a 10- to
12-inch diameter circle. |
|
3. |
Place pizza dough
rounds on the preheated grill using a wooden paddle (pizza peel) and close
lid; cook until grill marks appear on the bottom of each round, 3 to 5
minutes. Remove from grill and flip over on a work surface. Lower grill heat
to medium. |
|
4. |
Brush each round
with olive oil. Spread half the Asiago cheese on each crust; add tomatoes,
basil, and mozzarella. Season with salt and pepper. |
|
5. |
Transfer pizzas to
grill with wooden paddle and close lid. Cook until bottom of rounds is cooked
with grill marks and cheese is melted, 7 to 10 minutes. Remove from grill and
let stand for 5 minutes before serving. |
