An avocado has several natural benefits, including heart health, infection fighting, muscle development, teeth and bone strengthening, skin health, and digestive health to name a few.  Here is an incredible way to prepare some avocado to aid in your family’s health this summer:

                    Avocado Tomatillo Salsa



6 ounces fresh tomatillos - husked,

rinsed, and halved

1 tablespoon thinly sliced serrano chiles,

or to taste

1 large ripe avocado - halved, seeded,

and flesh scooped out of peel

1/4 cup packed cilantro leaves

1/2 lime, juiced

salt to taste



Place tomatillos into a food processor. Add serrano pepper, avocado, cilantro, and lime juice. Season with salt to taste. Process until smooth; adjust seasoning. Transfer to a serving bowl.


Here’s a fantastic, light dish you can eat all the time this summer.  You can prepare this for a light lunch, or dinner recipe.

                       Summer Pasta with Basil, Tomatoes and Cheese



2 pounds vine ripened tomatoes, seeded

and diced

3 cloves garlic, minced

1/2 cup chopped fresh basil

1 tablespoon chopped fresh mint leaves

3/4 teaspoon salt

1/2 teaspoon freshly ground black


1/4 teaspoon crushed red pepper flakes

1/2 cup olive oil

1/4 cup cream sherry

12 ounces spaghetti

1/2 cup freshly grated Asiago cheese

2 cups fontina cheese, shredded



In a medium bowl, toss together tomatoes, garlic, basil, mint, salt and black pepper, hot pepper flakes, olive oil, and cream sherry. Let stand at room temperature for up to 2 hours, stirring occasionally.


Cook the pasta In a large pot of boiling salted water until tender, but firm to the bite.


Drain the pasta, and transfer to a large serving bowl. Drain 1/4 cup of the liquid from the tomato mixture, and toss with the pasta to coat. Add cheese, and toss until it begins to melt. Add the tomato mixture, and toss until mixed.


Don’t forget your frozen adult beverage…sans ‘adult’ ingredients!!

                     Mojito Sorbet



1 cup water

1 cup white sugar

1/2 cup mint leaves, packed

1/4 cup grated lime zest

1 cup freshly squeezed lime juice

1 1/2 cups citrus-flavored sparkling


2 tablespoons rum (optional)



Heat the water, sugar, and mint leaves in a saucepan over medium heat, and stir until the sugar is dissolved. Bring the mixture to a boil, reduce heat, and simmer for 3 to 5 minutes to extract the mint flavor. Set the mixture aside to cool, and strain out the mint leaves.


Pour the cooled mint mixture, lime zest, lime juice, sparkling water, and rum into a bowl and mix well. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions. Serve immediately for a softer texture, or freeze in a sealed container for a harder sorbet. Let hard-frozen sorbet thaw a few minutes before serving.
